So far we have given you recipes from the Italian “famiglia” but as we already told you once, we have lived in France so we also have a wide repertoire of delicious French recipes that we have been making at home all our lives.
Today’s recipe is very versatile and perfect for summer because it is easy to make and always looks good, wherever you go.
It can be eaten hot, warm and cold.
The next day for lunch it is also always welcome.
At home we make it a lot with bacon but this one seems to me lighter and also suitable for vegetarians so it is the one with zucchini and feta cheese.
It is delicious and very tasty.

Ingredients

  • 4 eggs
  • 250gr heavy cream
  • Salt and pepper
  • Nutmeg
  • 2 zucchini
  • Feta cheese
  • Shortcrust pastry

Preparation

The first thing to do is to cut the zucchini without peeling them and sauté them in a frying pan with oil, salt and pepper and spices to taste.
Once done, let it rest and meanwhile in a bowl put the 4 whole eggs, add the jar of thick fresh cream, add salt and pepper and mix well so that all the ingredients are well integrated.
In a quiche mold, place the shortcrust pastry and prick it with a fork, in the bottom put the zucchini and the crumbled feta cheese in small pieces, add the mixture that is in the bowl and to finish and give it a touch more you can add grated Emmental or Gruyere cheese.
Put in the oven at 180 degrees below for 20-25 minutes. Et voilà! C’est fait!
It can be served with a fresh salad Bon appétit!
